I've been hooked on Ultimate Fighting Championship since a group of us discovered UFC#1 way back in high school on a buddy's illegal pay-per-view box. The big fight night is coming up this Saturday with the welterweight champ, Georges St-Pierre, hailing from Montreal, defending his title. Apparently, per capita, Canada, and Toronto in particular, have the highest density of UFC fans. Here comes the challenge...how do you incorporate a bunch of hungry dudes and a lot of testosterone with something besides just a few bag of cheetos, pizza and beer? If there are no other options around, I know I will be hungry and succumb to the easy but unhealthier choices. Here's where I need a healthy compromise.
These simple recipes are healthy, whole foods that are easy to prepare (by easy to prepare, I mean that I can even prepare them...I am not a natural in the kitchen, so these are guaranteed to be easy). Bonus, is that they are safe enough to serve to friends who don't think a meal of kale, brown rice and lentils constitutes a fun time.
Easy Schneezy Holy Moly Guacamole
2-3 Just soft avocados
Juice from one juicy lime
A clove garlic
A medium tomato, diced
2 pinches chile powder
A pinch of salt
1. Blend all ingredients with a handblender (or blender, food processor, Magic Bullet) and serve with tortilla chips - Neal Brothers organic blue corn tortilla chips are awesome.
Salivating Salsa
3 Medium tomatoes, diced (when you buy these, smell em to make sure they actually smell like tomatoes)
Half a red onion, finely chopped
A clove of garlic
1 Tbsp olive oil
Handful of fresh basil, finely chopped
Optional: A ripe mango, diced
Juice from 1/2 lemon
Salt and pepper, to taste

Humzinger Hummus that will Humble All
A can of organic chickpeas (if not organic, at least preservative-free, just read the ingredient list)
2 Cloves of garlic
2 Tablespoons tahini (ground sesame paste, available at most large grocery stores)
Juice from 1/2 lemon
2 Tablespoons good quality olive oil (cold-pressed)
Salt and pepper, to taste
1. Blend all ingredients with a handblender and serve with fresh sweet red peppers, cucumbers, celery, carrot sticks or a mixture of these.
Comment: Super healthy, surprisingly filling and everyone loves hummus.
There are three easy recipes with lots of similar ingredients that the guys (and brave gals who were dragged out) will enjoy; they are all actually quite addictive. Yes, there is garlic in all of them, but everyone will have equally bad breath. You can play around with the ingredients to suit your tastebuds.
